What is an enzyme drink?

An enzyme drink is a fruit-based wild ferment held below alcoholic threshold — long enough for lactobacilli to populate, short enough to stay bright and tropical. The result is a low-sugar, lightly fizzy, biologically active drink with real digestive enzymes still intact.

We do not pasteurise. We do not add probiotics from a sachet. The cultures arrive on the fruit itself and on the air of the island, and they do the work.

How we craft them

Whole fruit, pressed cold and steeped with mineral-rich plasma-structured water and a starter from the previous batch. Three days at island temperature, fermenting beside the sound-healing room. Hand-strained, hand-bottled, dated, refrigerated, and on a shelf within hours.
